Tasting Notes: Our Sauvignon Blanc is extremely crisp & refreshing, and is perfect for any San Diego day! On the nose, experience tropical aromas of guava, grapefruit and lemon. With a palate that is soft, but tart, this wine leaves you wanting more with every sip!

Food Pairings: Pair with herb-driven sauces over chicken, tofu or fish. Oysters with a lemon aioli sauce or shrimp skewers would also be great pairings. Warm goats cheese salad.

Technical

Harvest Date: Sept. 21th – Sept. 29th 2022
Fermentation: 2 weeks
Aging: 10 months in 25% once used American Oak and 75% once used French Oak. After about 10 months of being barreled separately, our Winemaker tasted each varietal and came up with this distinct blend, and bottled the wine in August 2023.

Vinification

We source our fruit from the Clear Lake AVA. Sauvignon Blanc is the area’s flagship varietal as it grows beautifully in the region’s sunshine & clean mountain air. This AVA is located only an hour and a half North from downtown Napa and surrounds Clear Lake, which is the largest freshwater lake in CA. Vineyards range from 1,300 – 1,500 feet, and the soils are mainly sandy loam. We produced our Sauvignon Blanc in a New Zealand style, meaning it displays incredible vibrancy and a sharp acidity.
