Tasting Notes:  On the nose, bright fruit such as red berries jumps out, followed by leafy herb & pepper notes. A slight touch of vanilla. Medium acidity and very well balanced.

Food Pairings: Barbecued or grilled meats would be a fabulous pairing. Earthier dishes such as mushroom risotto or a pepper sauce would also be delicious.

Harvest Date: Sept. 21th – Sept. 29th 2022
Fermentation: 2 weeks
Aging: 10 months in 25% once used American Oak and 75% once used French Oak. After about 10 months of being barreled separately, our Winemaker tasted each varietal and came up with this distinct blend, and bottled the wine in August 2023.

Vinification

GSM stands for Grenache, Syrah, and Mourvèdre – three important grapes grown in the Côtes du Rhône region of France. Rhône grapes started to appear more commonly in the United States when Tablas Creek Winery imported them to Paso Robles, California in 1990. Since then, Rhone varietals are grown all over California. We are sourcing the majority of the fruit for this GSM from Lake County, which is about one and a half hours North of Napa. With Clear Lake at its center, vines are planted around the hillsides of the lake. Altitude, climate, and soils result in grapes and wines of compelling quality and character. The 2022 growing season was consistent & mild, until an extended heat wave beginning in late August divided the season into earlier & later picks.  Once the fruit arrived in Oceanside, we destemmed and processed it here on site. The grapes then fermented separately for about two weeks.
