2020 BLANC DE BLANC

About the wine: This is some of the only fruit we got from 2020 due to the fires, white grapes don’t get damaged by smoke because the skins are separated before fermentation. We received 13 tons, once the fruit arrived in the cellar, we pressed it here on-site. We fermented the wine two ways: half in stainless steel and half in barrels with a sirlees “stirring” method. We then combined the two and aged the wine in neutral oak for 10 months. Half of the wine was bottled as a still Chardonnay, while the other half was sent to a facility to be carbonated. This resulted in our first ever Blanc de Blanc!

Tasting Notes: Dry, sparkling Chardonnay. Bright acidity, lemon, pear.
